Balsamic chicken

This flavoursome Balsamic Garlic & Herb chicken dish will be the envy of all your mates when you cook in the camp oven! Be sure to make extras to go around!

Step One

Marylands have been cut on top and tied with string. Balsamic vinegar, oregano, basil, oil, salt and pepper have been combined then rubbed over chicken.

Step Two

Place Marylands in your camp oven and cook through until there is no pink near bone, roughly 45 minutes or so.

Step Three

Once cooked through, fill cuts with mozzarella cheese and cover for five minutes to allow cheese to melt. While this is happening, halve cherry tomatoes then scatter over the top along with flat leaf parsley. Enjoy!

Ingredients

  • 8x Maryland pieces

  • Balsamic vinegar

  • 2 teaspoon oregano

  • 2 teaspoon basil

  • Salt and pepper to taste

  • 2 tablespoons olive oil

  • Half cup died of cherry tomatoes.

  • 250g mozzarella cheese
